i'm working on something like that
have a look here:

principially, all you got to do is replace the panel (panel.cfg in the aircraft's panel folder) with another. in your case, that would be the default aircraft/c172/panel folder.
you don't need to get a whole new aircraft.
with some changes done with a text editor to the aircraft.cfg you can have the plane with the original panel and your customized panel.
unless you want it to be a virtual panel, that is another matter.
