I actually like the 3d cockpit, to me its more "airplaney" than the 2d. The 2d does have more detail, but IRL you can't see the whole panel without looking around, and i know for me that in a real c172 i have a heckova lot more visibility over the nose than the sim allows, so i go to the virtual cockpit and bump the seat up 2 notches, doing it from teh 2d panel just ins't the same. Now what i DON"T like is that you can't actually interact with the cockpit, so i usually end up going back to the 2d panel when i need to use goodies that aren't programmed into my flight yoke (like changing radio freq's and such). I hear in CoF that the virtual cockpits will be fully interactive, and i look forward to it. to me it beats the snot out of having to "shift+2" et cetera to get other panels visible, at the cost of your outside view, be nice to be able to just pan over to the radio panel, and reach out to move the knobs, keeping at least part of the viewscreen in your field of view, just like IRL. Its also really cool to be able to see through the prop disk in the virt cockpits that you can't do in the 2d panel, adds just a bit more authenticity to the feeling of flying a computer vs the real deal. Its not perfect, i frequently end up switching between different view modes, but the smooth panning in the virtual cockpit also gives me a better idea about timing my turn to final and so forth when you may not be able to see the runway out of a 2d view window sicne it locks your POVswitch to 45 degree angles on the same azimuth as the airplane (ie in a bank to the left you are looking at the ground out the left window, cant look up towards the wing and see the bit of runway peeking out behind the wing, and so forth. Like i said the only shortfall i see is that you can't work switches from the 3dview. I don't really care how "cartoonish" it is, I've never been one for the photorealistic panel, just want it to be accurate instrument placement, and an accurate feel.
