Usually yes. Sometimes add-on aircraft use some kind of installers which may
create an uninstaller of its own which has to be used in order to get the
install information out of system registry. It's very rare, though, usually
concerns only some payware addons. If you've just unzipped the addons
directly in the FS2002 directory, no uninstaller is created.and you can
safely delete the corresponding aircraft directory.

The add-on gauges are left, as Pål said, but it's no concern since they can
be in the gauges-folder without having an effect on performance. They take
disk space, though.
